Happy New Year!
New Year's Eve was another quiet (except for the blaring iPod) but fun and delicious night. At first we were planning on making enchiladas, but when it came down to it, we decided it would be too much work. We wanted to spend a relaxing evening celebrating the New Year. So we made Spanish chicken, chile rellenos, and Spanish rice, which of course, ended up being as much, if not more, work than if we would've made enchiladas. Doh! Oh and we had couple bottles of wine too.As you can imagine, C and I have been craving some Mexican food ever since we moved here. So for our special New Year's dinner, we decided to download some recipes off of the Internet and give them a try.
C made the Spanish chicken and the chiles while I worked on the rice. Oh man did it ever smell good. Oh and C made some of her tasty flan. It was flantastic!
The dogs, for the most part, were well behaved and very patient. The cat was good too, but she was riding the line there for a while.
It sure didn't take long for the food to disappear once it was served up. We wanted to put on some Mexican music to go along with dinner, but alas, I left my entire Menudo box set back in the Bay Area. Dang it!
Between eating and taking our 12-hour siesta, we managed to play a couple rounds of poker. We cranked up the James Brown for this. "Poppa's got a brand new bag... and tens full of Jacks!"
So begins our first full year in Regina (heh heh) and C and I are pretty excited. It should be full of obstacles and challenges, highs and lows, searing heat and freezing cold (and then even colder cold), but most of all it will be filled with adventure.
